The physicochemical characteristics of honey and honey water (água-mel), together with some of their biological properties (antimicrobial, antiviral and antioxidant) related to their chemical composition, make them good candidates to be considered as a functional food or ingredient in functional foods. Therefore, the proposed project aims to characterize monofloral honeys and products derived from beekeeping, from various geographical areas of both Andalusia and Algarve-Alentejo, taking into account physical, chemical and botanical parameters. Honeys of special ecological value produced in protected geographical environments (Natural Parks) will also be considered.
